Biochemist Patrick Brown has developed a veggie burger that "bleeds" like real meat. The secret ingredient is heme, a molecule that comes from the roots of nitrogen-fixing plants but has the iron-tinged character of hemoglobin. His start-up, Impossible Foods, has raised $75 million, including cash from Google Ventures.
